At Akasha Restaurant, located within the stunning Aruna Resort in San Pedro, Belize, our philosophy is simple: real flavor begins with real ingredients. That’s why we cook local.

Belize is home to an abundance of fresh, seasonal produce, Caribbean seafood, and vibrant spices. We believe in celebrating what grows and lives here naturally, both to support our local community and to deliver an honest culinary experience that reflects our land and waters.

What “Cooking Local” Means to Us

Cooking local goes beyond just shopping nearby. For us, it means building relationships with farmers, fishermen, and artisans across the island and mainland. It means knowing where our snapper was caught, who grew the peppers, and how the coconuts were harvested.

By sourcing fresh ingredients directly from Belizean producers, we create dishes that are not only more flavorful but also more responsible. Seasonal menus reduce waste, support the economy, and keep our carbon footprint low.

Signature Dishes That Showcase Local Flavor

Many of our most popular plates highlight the richness of Belizean ingredients:

  • Yellow Jack Aguachile: Fresh jack, avocado, roasted corn, cucumber, radish, and shoestring tortilla chips. Our aguachile is one of the house favorites, made with fresh jack, a fish brought directly from local fishermen. Found at depths of 40–45 meters, it’s complemented by a juice of cilantro, jalapeño chiles, and lime, served with avocado, fried tortilla, cucumber, and radish.
  • Tamal de Pesca y Mole Verde: Catch of the day cooked over binchotan, wrapped in banana leaves, served with mole verde and a soft tamal base. Inspired by a traditional Belizean tamale, this dish reflects Chef Carlos’s time learning in a Maya community in Cayo. It’s topped with pumpkin and sesame seeds.
  • Fish Croquettes: Served with seaweed garlic aioli and herb oil. Made from fresh fish and a Spanish-style béchamel with smoked bonito broth, these croquettes are coated in Japanese panko for an extra crisp bite. Three per order — perfect for sharing with a group or pairing with a drink.

Our menu changes with the seasons, and that’s the beauty of it — no two visits are exactly the same.
