Behind the Bar: Crafting Signature Cocktails With Local Ingredients
At Akasha, the view might first catch your eye, but it’s the cocktails that keep you coming back. Whether you’re lounging by the infinity pool or sitting down for a sunset dinner, our bar experience is anything but ordinary. What makes it so special? A mix of creativity, local flavors, and our in-house mixologists who take their craft seriously.
Local Roots, Global Technique
Belize offers more than beautiful beaches — it provides a rich pantry of fresh fruits, herbs, and spices. At Akasha, our bartenders use these native ingredients to build drinks that are layered, surprising, and deeply connected to the land. Think watermelon from the local farmstand, basil from our herb garden, or sorrel infused with rum.
“When we create a new cocktail, we start with what’s in season,” says Erik, our lead bartender. “It’s about finding balance between flavor, color, and feeling.”

Signature Creations
Here are a few of the handcrafted cocktails that highlight our mixology approach:
TROPICAL BLISS
Gin, cardamom syrup, lemon juice, raspberry and parsley cream top
Fresh, floral, and unexpected — this cocktail is a crowd favorite that plays with texture and aroma.
JUNGLE ELIXIR
Aperol, Campari, thyme syrup, lemon juice, aquafaba, scented with citrus tincture
A Belizean twist on a bitter classic. Earthy, tart, and beautifully foamy thanks to the aquafaba.
THE BACKPACKER
Bourbon, aromatic bitters, lemon juice, agave and thyme syrup, aquafaba
Rich and smooth with a herbal note — this one’s for the traveler with refined taste.
Behind the Scenes
Every cocktail begins with intention. Our bartenders focus on the small details. You’ll often find them experimenting with new infusions, syrups, and bitters after hours — all in pursuit of the next great flavor.
Erik shares, “We treat our cocktails the way the kitchen treats a dish: with technique, respect, and a desire to surprise.”
