- Catch of the day cooked over binchotan, served with tamal base and green mole
- Slow-cooked short rib with truffle mashed potatoes and natural jus
- Roasted chicken with fries, mac and cheese, and loaded romaine salad
🍰 Dessert: Basque cheesecake with Belizean cocoa powder and espresso cream
