This refined plate is the vision of Chef Carlos Serrano (@serranococina), who drew inspiration from one of Belize’s most iconic dishes: the tamal. But it wasn’t just any tamal—this version was born after Chef Serrano spent time in a Maya community in the Cayo District, learning about ancestral cooking techniques and the cultural significance of native ingredients.
“This dish is a love letter to Belizean cuisine,” says Chef Serrano. “I wanted to create something that respects the past but excites the modern palate.”
A Modern Take on a Cultural Icon
The Tamal de Pesca & Mole Verde begins with a base of creamy, soft tamal—delicate in texture, yet full of depth. The catch of the day is then oven-cooked inside banana leaves over binchotan, a high-quality Japanese charcoal that brings subtle smokiness and enhances natural flavors.
It is topped with mole verde, a vibrant green sauce made from herbs, pumpkin seeds, sesame, and spices, giving the dish a nutty, herbal complexity. Finished with toasted seeds and a drizzle of house oils, each bite is a layered experience: earthy, rich, bright, and deeply satisfying.
This dish is not only one of our best-sellers but also one of the most emotionally resonant items on our menu. It bridges the past and the present, the local and the global, the traditional and the innovative.
